Ingredients for 4 people:
- 100g of OrtoRomi mixed salad,
- 2 pink grapefruits,
- 60g of peeled almonds,
- 100g of goat logs,
- 40ml of extra virgin olive oil,
- 1 tablespoon of apple cider vinegar,
- 1 tablespoon of acacia honey,
- 1 sheet of carasau bread,
- Salt.
Preparation
Peel the grapefruits and cut them into slices, recovering the juice.
Coarsely chop almonds and toast them. Brush the bread with a drizzle of oil, salt it and toast it for a few minutes under the oven grill.
Emulsify the grapefruit juice with 1 teaspoon of salt, 1 tablespoon of oil, honey and vinegar.
Season the mixed salad, then place it in the bowl with the chopped carasau, grapefruit slices and crumbled goat cheese. Complete with almonds toast and serve.
