Ingredients for 4 people:


1 bag of OrtoRomi scarola lettuce, already washed and ready to taste,
200g of carrots,
1 bunch of white grapes,
1 pear,
1 clove of garlic,
Rosemary,
2 tablespoons of lemon juice,
Extra virgin olive oil,
2 teaspoons of sumac (red berry),
1 teaspoon of paprika.

Preparation

Raw scarola lettuce is particularly appreciated for its crunchiness and delicate and slightly bitter taste. For a mixed salad we suggest accompanying it with other ingredients with a sweeter flavor such as grapes, pears, pumpkin and carrots.

Cut the carrots into cubes and transfer them to a baking tray lined with parchment paper. Season with oil, salt, pepper and add the rosemary and garlic. Bake in the oven at 180°C until soft and golden. Meanwhile, mix the lemon juice, 4 tablespoons of oil, sumac and paprika in a small bowl, emulsifying with a fork. In a bowl, collect the escarole, carrots, grapes, sliced ​​pear and season everything with the sumac dressing. Stir and serve.
