Paccheri with sausage, scarola and olives

Ingredients for 2 people:


  • 1 sausage
  • 250 g OrtoRomi scarola lettuce
  • 2 tablespoons of olive taggiasche
  • 180 g paccheri
  • Extra virgin olive oil, salt and pepper to taste

15 minutes


Preparation

Prepare meatballs with the sausage and brown them in a pan with a drizzle of oil.

Add the OrtoRomi scarola lettuce and cook over low heat for about 5 minutes. At the end of cooking, flavor with olive taggiasche.

In the meantime, cook paccheri. Drain and reserve some of the cooking water.

Add pasta to the sauce and sauté everything in the pan for a couple of minutes to combine them as best as possible.

Serve the dish.

Instead of the sausage, you can use 2/3 anchovies in oil or cubes of smoked tofu.
