Ingredients for person:
cabbage OrtoRomi
variegated radicchio from OrtoRomi
OrtoRomi rocket
radicchietto OrtoRomi
bulgur
boiled lentils
feta cheese
almonds
flax seed
blackberries
Vinaigrette:
3 tablespoons of extra virgin olive oil
2 tablespoons of OrtoRomi orange extract
1 tablespoon of apple cider vinegar
salt and pepper
Preparation
Spread the salads on a serving dish one at a time making a layer for each type, cabbage, radicchio, rocket and radicchietto.
Add the lentils, diced feta, bulgur, coarsely chopped almonds, flax seeds and blackberries.
Prepare the vinaigrette by mixing oil, vinegar, orange extract, salt and pepper with a whisk and pour it over the salad.
One more idea: You can replace the lentils with chickpeas, peas or beans. Instead of feta, you can use flaked Parmesan cheese or tofu or seitan to prepare a vegan salad.
