Ingredients for 4 people:
200g of flour (100g – 00 flour, 100g corn flour)
1 tablespoon of turmeric
2 tablespoons of sunflower oil
Julienne cut carrots and cabbage by OrtoRomi. They are available in pratic 200g bags, already cut and ready to eat.

Preparation
Tacos are a must in tex mex street food, ideal to enjoy with friends in an informal dinner. Usually are prepared with meat but we want to offer you a vegan version with cabbage.
Sift 00 and corn flours with turmeric and a pinch of salt. Add oil and water and knead until you get an elastic consistency that does not stick to your hands. Cover with a plate and let it rest for at least 30 minutes. Roll out a fairly thin sheet on a floured surface with the help of a rolling pin and shape circles with a pastry ring. Cook the tacos in a non-stick pan with a thick bottom, 1 minute per side. They need to remain soft and elastic because later you have to cooled them on a gried in order to give the typical shape of a taco. Stuff the tacos with julienne cut cabbage and carrots, season with oil, salt and pepper. As a final touch sprinkle with fresh parsley.
